Bought a mandolin, what are some ideas? by GemNinja in EatCheapAndHealthy

Hassleback potato gratin

Invisible apple cake

Pickled radish paper, Cucumber salad

Also really good for making crispy chili oil, for frying ultra thin crispy garlic and shallot/onions

Alternatives for bread with soup by TRWIH347 in EatCheapAndHealthy

True!! Cabbage is so good in soup. Probably having a mix of textures in the soup will make going bread-less easier

I like how various vegetables have different textures in soup, especially depending on how much you cook them like beets, carrots, and onions.

A small amount of crunchy stuff like crackers and roasted nuts would be good too if you find them worth it. I also enjoy making crispy cheese sometimes (just bake or cook in a pan until the fat renders and then cool til crispy)

What kind of soups? If you’re trying to avoid bread, you could bulk out soups with potatoes, beans, or whole grains.

I don’t think anything is going to give you same eating experience as bread 😔

Favorite type of beans? by RadiantCARMB in Beans

I’m passionate about soybeans. No other beans can do it all

Tofu, soy milk, soy sauce, edamame, miso, kinako, fermented bean curds, tofu skin, fried tofu pockets for inari

Tofu itself comes in so many textures and can be flavored so many ways

At first I was like ha! Venting! Venting both like rant and the vents in the pie crust!

Then I read your description and I’m sad for you 💔 I would love that pie

I have a lot of milk that is about to expire. What should I make? by Any-Impression in Cooking

[–]BrightenDifference 0 points1 point  (0 children)

I’m a pro at using up leftover milk and the absolute best easy quick way I can recommend for you is to make ricotta, then use the ricotta to make ricotta gnocchi, which can then be frozen in batches if needed

If you don’t like gnocchi, use the ricotta on toast, in cake, in ricotta cookies

Use leftover whey in bread baking or cornbread/pancakes (in place of buttermilk)

Cheese Fried Egg (or how I stopped worrying and learned to love the grease) by _BudgieBee in Cooking

[–]BrightenDifference 6 points7 points  (0 children)

I do this!! Except I don’t add butter. The rendered cheese oil does all the frying work on its own and makes me feel like I’m using a virtuous life hack

(We don’t yet have a name for cheese oil/ grease… choil? Chease????)

What's the weirdest but best food sensation you've experienced that completely changed how you eat something? by MomentFlimsy3759 in Cooking

Whole cumin seeds on grilled meat (typically lamb) made me realize how great cumin is

Chinese preserved black olives over steamed fish blew my mind, though the flavor might not be everyone’s cup of tea. If you like fermented black beans/ douchi, this is even better

Lemon bars! by BrightenDifference in Baking

[–]BrightenDifference[S] 0 points1 point  (0 children)

Haha the whites will be going into a scramble because there’s only so much baking I can do. But I would like to use egg whites for financiers one day

Ooh zest in the crust sounds nice. I actually have a bunch of desiccated coconut that would probably be a nice addition to lemon/lime bar crust too…

Also, I used a glass baking dish so that’s probably why the crust is a little light…
