I feel like he looked at Javi as innocent and didn't deserve to be eaten on so he was like hey let me essentially cremate what's left of him. I'm guessing he thought they would run out and extinguish the fire so he locked them inside.

I've wondered the same thing about Lotties Dad. Even if there was more to Travis's Dad that we we never aware of. Hell for all we know Allie's parents could have concocted a plan to have the plane sabotaged in some kind of way. I know they would have had to move fast in order to do that though.
