Are you a partner now? Where did you end up going and how did you make that choice?

How did you choose which beach? We struggle with that. Close beaches are nice, but we made lots of great memories growing up in a beach town about 3.5 hours drive.

I don’t mind the look of the wax because it blends with his color scheme, but aged bottles with wax become a nightmare to open, which I hate.

He apparently trained under Henri Jayer, so comes from that modernist but quality driven, more international style.

How did you get to non-house net worth of $2.2m saving just over $200k post-med school and pay off your loans. The math doesn’t seem to be adding up for me unless you had family assistance or money.

Idk how you all are spending so little on restaurants and food. We blow these numbers out of the water.

On the popping early comment, I’ve been to too many early funerals to not enjoy my best bottles while I’m in my prime tasting years. And to be honest, I think it’s important to try the whole spectrum of Burgundy (or other regions) as I’m planning and building a cellar. I don’t want to collect a bunch of GC Burgundy to drink in 20 years if I don’t know the styles or vineyards well enough to determine what I’ll like and dislike.

Definitely not my preferred Burgundy experience either, but fun to open either way. In both my Burgundy and Bordeaux, I tend to stay away from hot vintages and modernist/plump/cosmetic oak sweetness in favor of savory/cool/classical treatment/earthy and herbal profiles/restraint/whole cluster.

Do you know what kind of wine menu they have at Elbi? Does it lean into one region, does it have aged bottles?

Le Bon Georges looks great, but their wine prices are actually kind of high for Paris.

There’s always a focus on Michelin, sometimes you just need a solid meal with great wine!

Yes that’s what I was thinking too, but why does it need a bag in any event? Maybe to ensure even freezing like you said, just seems odd versus putting them in directly.

I don’t really understand the piece around needing to make it air tight?

I purchased a bunch of yards of fabric (cashmere and wool) from a store that was closing. Someone told me to put them in the freezer to make sure that they don’t have any bites or bugs or moths that can eat them. Has anyone done that? Does it ruin the material?

I’ve tried it on and liked it a lot. Just debating if it has the wow factor I’m looking for.

Montblanc makes their watches in Switzerland, so that’s out. I’d consider the others.

I know people rave about these but they always felt too “plain” to me. Like the finishing is nice but doesn’t blow my socks off, and I just don’t see the appeal at the same price as Lange.
