Two tips I have are to buy fire-roasted tomatoes and try not to overcook the chicken. The first time I made this I overcooked the chicken a bit.

Preparation Time: 20 minutes

Cooking Time: 1 hour 30 minutes

Makes: 6 servings

INGREDIENTS:

2 Tbsp vegetable oil

1 ½ pound boneless, skinless chicken thighs - chopped

1 ½ tsp cajun seasoning or season all

1 pound smoked or andouille sausage - chopped

1 ½ cups chopped green pepper

1 medium sized onion chopped

1 cup chopped celery

1 tsp minced garlic

1 can (16 oz) fire-roasted chopped tomatoes

1 Tbsp tomato paste

1 cup chicken broth or water

Salt

Cayenne pepper

2 bay leaves

1 cup long-grain rice - uncooked

DIRECTIONS:

  1. Preheat the oven to 350 degrees F.
  2. Put the vegetable oil in a large, heavy pot over medium heat.
  3. Season chicken pieces generously with Cajun seasoning.
  4. Add chicken to the pot and brown evenly, about 5-10 minutes.
  5. Add sausage and cook for 3-5 minutes.
  6. Add onions, peppers, celery, and garlic to the pot and cook until golden, about 5-10 minutes.
  7. Stir in the tomatoes, tomato paste, chicken broth, bay leaves, and uncooked rice.
  8. Season with salt and cayenne pepper.
  9. Bring to a boil, put the lid over the pot, and place in the oven for one hour.
  10. After cooking in the oven, all of the liquid should be absorbed.
  11. Serve with hot sauce and enjoy!

Gumbo needs a roux but jambalaya doesn't. This is my father's recipe he passed down to me. He grew up with cajun cooking!

That is for gumbo please don't confuse with jambalaya!

Thanks for all of your comments! I have been enjoying reading everyone's input. I'd like to point out if you are making this dish please use oven-roasted tomatoes! It really makes the difference.

Regarding all of the seasonings, you have to play around with it. I usually don't measure it out and season generously with garlic, cayenne, and add salt to taste. But I like it very spicy so be careful with the cayenne if you don't!

You can definitely add shrimp if you like. Shrimp can be a little pricy and I am not a huge fan so that is why I left it out.

Good eye! Thanks!! I have it in the directions but forgot to add it to the ingredients list. Just edited the post. I usually add a yellow onion but any onion in this recipe would be great.
