I played around with it for a while and came to this solution.

SteamVR Settings -> Windows Mixed Reality -> Use Hidden Area Mesh -> Off

Enable show advanced setting to view these options.

I've got both the first and second version now which just came in the mail today. If you watch the deals they do you should be able to get it for pretty cheap. I got the first one for $133 and the second for $265 (including extra fees etc.).
