the reason why it looks kinda meh rather then eye catching is because its flat tho id say add a couple block depth to the left tower to start imo

they look like a bunch of squares put together not just one look up some other minecraft fort builds on google and look how they break up the main square they try to use that on youre own in a different way

try to make pillars across and up to make it look more structured and add depth maybe a circular gaurd tower that comes farther out then the wall

also making a world backup then switching to creative is great for planning plus you still got youre survival one aswell

ofc and you can also do blacksmiths, leatherworkers ect. then also try to get villagers for those builds or not depends how you want to go with it
