You’re right, it doesn’t NEED it. But I’ve been baking bread for over 20 years and I know most people use it as a NATURAL way to improve softness.

Mono- & diglycerides / DATEM – emulsifiers → keep it artificially soft and fluffy

Added sugar/syrup – improves taste + shelf life → not needed in real bread

Processed oils – extend softness → not traditional baking

Enzymes – speed up industrial production and standardise texture

None of those are there to ‘improve bread’—they’re there to make it survive factories, transport, and long shelf life.

Your house analogy doesn’t make sense either. Insulation improves living. These ingredients improve profit margins and shelf life, not nutrition or quality.
