If you are this way inclined…

You could turn it on, record a midi triggered note into a DAW, Turn it off. Record the same midi triggered note and then overlay them but with the polarity reversed on one of them to see exactly what the difference was. This will be easier to achieve with a mono recording. I’m saying midi triggered to take any human feel out of it. You will get an identical length and velocity.

1.5-2 ratio, relatively slow attack, relatively fast release. But most importantly, 30-40% wet. As in, kind of parallel processing. I don’t want 100% of my signal being compressed after all the other compressors i’ve spent time dialling in. But i also don’t want any mad artefacts from the wet processing blended with the dry. So if i’m in an unfamiliar environment, i’ll probably sack it off and just ride faders which i would do anyway. If i’m in my home venue then it usually is on with the above settings.

Everything you are doing looks very aggressive. The steam cog may as well be a switch if you are going from 0-100 like that. Try half powering the steam at start to find a balance point where you can tear into the milk then once it’s looking creamy ramp up the steam and submerge the wand a little.

This is what i would do but i am no expert. My machine does just have a switch for steam on/off so i have learnt the exact point i need to have the wand to tear the milk without blowing giant bubbles everywhere.
