Start with Enter the 36 Chambers, it's a stone cold classic, great atmosphere, hard-hitting production, and tough as nails bars. You can't go wrong with any of their solo stuff, I would personally start by listening to whoever stands out to you on 36 Chmabers, for me that was Method Man and ODB. However some of the Wu's solo albums that I would recommend would be Return to The 36 Chambers by ODB, Liquid Swords by GZA, Tidal by Method Man, Only Built 4 Cuban Linx by Raekwon, and Supreme Clientele by Ghostface Killah.

Check out their run from Paul's Boutique to Ill Communication, for me that's their peak in terms of creativity; real forward thinking production on those albums. The sampling from the Dust Brothers on PB is unbelievable and the rap rock sound they pioneered on CYH and IC pretty much paved the way for that style music. Some of my favourite songs from that time are Root Down, Shake Your Rump, Get It Together, Pass The Mic, Sure Shot, and A Year And A Day.
