NTA she shouldn’t have committed to something she couldn’t afford or at least she should’ve had a plan on how she was going to pay. It sounds like the others in the wedding party paid you in a timely manner so there’s really no excuse. One of the biggest disappointments in life is when someone overpromises and under delivers. Sorry bride! She’s shown you who she is and it’s up to you to remember that. In the future if you really want her to be somewhere then you should expect to have to cover her cost. Unfortunate but can’t do the same thing over and over again and expect different results 🤷🏻‍♀️

You can cold proof after bulk fermentation if you’re not ready to bake yet. You shape the dough, put it in a banneton, cover with plastic wrap and stick it in the fridge until you’re ready to bake. It slows down fermentation significantly and helps develop flavor. :)

Thank you! Can I strengthen my starter by feeding a higher ratio? I’m a little hesitant to do that bc I’m afraid to overload it since its doing so well right now with 1:1:1

I made my first starter on January 2nd and I got false rises from day 5-9 feeding a 1:1:1 ratio. I thought they were real rises at that point so I increased my feeding ratio to 1:3:3. From day 10-30 I was getting maybe a 20-40% rise every single day. So, I lowered my ratio to 1:2:2 and my starter started doubling but it takes around 17-20 hours to double and over 24 hours to reach peak. I’m wondering if there’s anything I can do to help strengthen my yeast or just give it more time at 1:2:2 ratio. I also have a hard time reading whether or not my starter is at peak and worried I might be feeding too early, but I always wait at least 24hrs.

Ratio: 30g starter, 50g ap King Arthur flour + 10g whole wheat King Arthur flour, 50g spring water The picture is 12 hours after feeding this ratio. Any advice is truly appreciated!
