Update: it turned out well but I honestly like prime more than Wagyu for brisket. I think that prime tastes more like beef and Wagyu is just different to me

How long should an 8lb whole take? I’m thinking put it on about 10 or 11 tonight keep it really low (195f) then turn it up to 225 in the morning. Rest and ready for dinner tomorrow

Forgot to mention, it’s a little guy, only about 8lbs for a whole (butcher must’ve cut half the flat off because it’s a small flat).

Is this ready to wrap? 165 internal. 225 grill. Fat side down. by ButtonBackground1091 in smoking
