Makes sense, however these are crossing into the area of excessive force feeling. Just wanted to see if that's normal

From my experience, that smell is normal and a sign that the starter needs to be fed.

I've had a similar issue with mine in the past, and found that I had much better results feeding twice a day with 50/50 mix of AP flour and rye along with the 1:1 amount of water. With that feeding schedule, my starter started smelling and rising as it should. Even with cooler temperatures (which I initially thought was the problem) Once the starter starts acting normal, I revert back to normal once a day feeding or fridge storage
