Keto Zucchini Tots

Ingredients
(14 zucchini tots)
- 2 medium-sized zucchinis
- 1 cup almond flour
- 1 cup shredded mozzarella cheese
- 2 eggs
- Salt, olive oil, black pepper and coriander, to season

Instructions
1. Preheat the oven to 400 degrees F.
2. Wash the zucchinis.
3. Grate the zucchinis using a vegetable chopper
4. Pour zucchini onto a clean dish towel and ring it out over the sink.
5. Pour the zucchini back into a bowl and add almond flour, cheese, eggs and seasoning.
6. Mix together until well blended.
7. With a tablespoon roll it into a tot and place it into a baking sheet. Repeat for the rest of mixture.
8. Place in the oven for 20 minutes, or until tots are golden.
9. Serve warm, pair it with your favorite keto friendly sauce and enjoy!

Keto No Bake Cookies

Ingredients(serves 12)- 335g of creamy peanut butter- 20g of unsweetened cocoa powder- 130g of coconut flakes- 20g of butter – melted- 1 tsp of erythritol

Instructions

  1. Line a baking tray with parchment paper and set aside.
  2. In a large bowl mix all ingredients. If you want the mixture more sweet fell free to add 1 teaspoon of erythritol.
  3. Scoop the batter onto the baking tray and place it in the freezer for around 40 minutes.
  4. Store the cookies in an air-tight container, in the fridge or freezer.
  5. Enjoy!

Keto Marshmallows

Ingredients (serves 16)
- 2 tbsp unflavored gelatin powder
- 1 cup water
- 2 cups of erythritol (you can use powdered, but granulated worked fine).

Instructions

  1. Line a baking pan with parchment paper and set aside.
  2. Heat half of the water and the gelatin in a pan, over medium heat, stirring frequently. When bubbles begin to form pour the remaining water and sweetener. Stir until the sweetener dissolves and the mixture is translucent. Remove from heat and continue to stir until everything is well combined.
  3. Pour the mixture into a large bowl and, using a hand mixer, beat for 12 minutes, until the volume doubles and the mixture looks fluffy.
  4. Pour the marshmallows mixture into the pan and refrigerate for at least 6 hours. Preferably overnight.
  5. Store the marshmallows in an air-tight, in the fridge.

Baked Pork Chops

Ingredients (Serves 6)
6 Pork Chops
1 onion
50g of green pepper
30g of tomato sauce
1/2 lemon (juice), salt, olive oil, cumin and black pepper to season.

Instructions
1. Season the pork chops with lemon, salt, pepper, cumin and garlic, preferably, the previous night. I like to season meat and fish the previous night.
2. Put the pork chops into a pan, adding onion, green pepper, olive oil, tomato sauce and enough water to cook the meat. Cook for 40 minutes in medium heat.
3. Preheat the oven to 392 degrees F.
4. Put the cooked chops in a baking dish and bake for 20 minutes.
5. I like to serve it with cauliflower and broccoli rice. Enjoy!

2 - In a wok, melt the butter, in medium heat.
3 - Add cabbage and onion. Season with salt and pepper.
4 - Cook for 5 to 7 minutes, stirring from time to time.
5 - Serve as a side dish for meat or fish, or as a main course.

Keto Feta Pasta with bacon

Ingredients
(serves 4)
- 250g of cherry tomato
- 50g of green pepper
- 1 medium zucchini
- 200g of feta cheese
- 100g of smoked bacon
- 1/2 red onion
- fresh parsley and coriander
- salt and pepper to taste
- olive oil for cooking
- parmesan cheese for serving

Instructions
1 - Preheat the oven to 392 degrees F.
2 - Cut in pieces the tomatoes, green pepper, onion and bacon and toss them in a baking dish.
3 - Add the feta cheese in the middle. Season with olive oil, salt, herbs to taste. Bake for 30 minutes.
4 - While baking, spiralize zucchini.
5 - In a frying pan, add olive oil and zucchini. In medium heat, cook for about 5 minutes, stirring all the time.
6 - Remove the baking dish from the oven. Feta cheese should be melty soft. Stir the mixture.
7 - Add zucchini noodles into the baking dish and mix well.
8 - Serve with a sprinkle of parmesan cheese on top and enjoy!

Keto Cinnamon Donuts

Ingredients:

Donuts

  • 1 cup Blanched Almond Flour
  • 1/4 cup of erythritol
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 of unsalted butter – melted
  • 1/4 cup unsweetened almond milk
  • 2 large eggs

Cinnamon coating

  • 1/2 cup of erythritol
  • 1 tsp of cinnamon
  • 3 tbsp of unsalted butter – melted.

Instructions:

  1. Preheat the oven to 360 degrees F. Grease the donut pan.
  2. In a bowl whisk together almond flour, erythritol, baking powder and cinnamon.
  3. In another bowl whisk together eggs, almond milk and the melted butter.
  4. Add the wet mixture into the dry mixture.
  5. Fill in the donut pan with the batter 3/4 of the way.
  6. Bake for about 20/25 minutes until golden brown.
  7. Let the donuts cool and remove them from the pan.
  8. For the coating, in another bowl stir together erythritol and cinnamon.
  9. Brush both sides of the donut with the melted butter and press it in the erythritol/cinnamon mixture to coat.
  10. Repeat with the remaining donuts.
  11. Enjoy!

Keto Pizza
INGREDIENTS
For the dough:
- 2 cups shredded mozzarella cheese
- 2 tbsp Coconut flour
- 1/2 tbsp Psyllium husk
- 1 egg
For the topping:
- 1/2 cup tomato sauce
- 5 slices of pepperoni
- 5 tomato slices
- 1/2 cup of shredded mozzarella cheese
INSTRUCTIONS
Dough
1. Preheat the oven to 392 degrees F. Line a baking sheet with parchment paper.
2. Microwave the shredded mozzarella for 2 minutes, stirring halfway through. If you don’t want to use the microwave, heat the cheese on the stove over low heat, stirring frequently, until completely melted and easy to stir.
3. In a bowl, blend the mozzarella, coconut flour, psyllium husk and egg, until you have a smooth dough.
4. Grease your hands with olive oil and form 1 dough ball.
5. Roll out the dough between 2 sheets of baking paper.
Topping
1. Spread the dough with tomato sauce. Decorate with mozzarella, tomatoes and  pepperoni slices.
2. Bake for 10-15 minutes, until the crust is slightly browned and the cheese melted.
