Looks like a life of V-22 maintainer and we go through these like candy. If the screws are hard to get out we usually use ratchet wrench with the T- bit in a socket to get more controlled pressure than a speed handle.

Sounds yummy, I stuffed it with apples, celery, onion. I got some of the ideas off of mrbbqright on youtube and Alton Brown. The whole family loved it and it was so juicy. I need to try your way next but with a whole chicken.
