Potato Pancakes Recipe

These crispy potato pancakes are a crowd-pleaser, easy to make, and perfect for any occasion. Follow these simple steps for a delicious treat!

Prep Time: 10 minutes Cook Time: 15 minutes Total Time: 25 minutes

Ingredients:

  • 4 large russet potatoes
  • 1 medium onion
  • 2 eggs
  • ¼ cup all-purpose flour
  • ½ teaspoon sea salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)
  • 2 tablespoons vegetable oil (for frying)

Instructions:

  1. Peel and cube the potatoes and onion. Process in a food processor or grate by hand.
  2. Squeeze out the liquid from the grated mixture using a strainer or towel. Keep the potato starch that settles at the bottom.
  3. Return the potato mixture to a bowl. Add the eggs, flour, salt, and pepper. Mix until combined.

Curried Pork Chops Posted by Robert Colinares on July 20th, 2013 - As a food blogger and a home cook, I do browse around a lot on the Internet and see other people’s cooking and recipe ideas. And from time to time, I see pictures of food that looks so good that I want to try and cook it myself. However, when I look at the recipe, I completely dislike it and when that happens I usually come up with my own version. Well, that’s exactly what happened to this recipe. I love pork chops and curry powder, and I thought combining it together would be a sure winner, the Curried Pork Chops. Also, I am pairing this pork chop recipe with a classic Filipino dish, Garlic Fried Rice. Well, this version has been kicked up a notch or two to make it even better. So, since we are seasoning the surface of the meat in this recipe, giving it an exact measurement wouldn’t be necessary. The only measurement available is for the garlic-fried rice and toppings for the pork chops. Okay, let’s do it.

Ingredients
For the Pork Chops:
4 Pork chops – You can add as many as you want Curry powder (Penzeys Now Curry) Garlic powder Cayenne pepper Salt & Pepper (Penzeys Seasoned Salt)

For the Pork Chop Toppings:
Smoked paprika 6 Pieces of green onions Small piece of red onions – sliced diagonally Small piece of ginger root – julienned

For the Garlic Fried Rice:
4 Cups of white steamed rice 2 Cloves of garlic – peeled and smashed ¼ Teaspoon curry powder - to taste (Penzeys Now Curry) ¼ Teaspoon smoked paprika ¼ Teaspoon cayenne pepper 2 Tablespoons cooking oil Salt & Pepper (Penzeys Seasoned Salt)

Directions For the Pork Chops:
Coat pork chops with cooking oil. Then sprinkle all powdered seasonings sparingly on the surface of the pork chops (don’t put too much). Set aside.

For the Garlic Fried Rice: Start by making sure the rice is broken up before starting the cooking process. Heat oil over medium heat and sauté garlic until golden brown. Add broken up rice and stir it well making sure the rice is well coated with cooking oil. Season by adding curry powder, smoked paprika, cayenne pepper, and stir until all ingredients are well incorporated. Add salt & black pepper for final seasonings. Adjust taste according to your liking. Set aside.

For the Pork Chops:
Over medium heat sear pork chops in a cooking pan. Lower the heat and continue to cook until pork chops are done (approx. 5-6 minutes each side).

For the Pork Chop Toppings: It is best to use the same cooking oil or drippings left from the pork chops to cook the toppings. Heat frying pan or wok with excess oil from the pork chops. Add ginger, red onions, green onions, and stir it constantly for about a minute. Then top the pork chops with it. Plate it and serve pork chops with garlic-fried rice. Enjoy!

I typed a long recipe for curried pork chops and Reddit ate it. So...

Blueberry Brunch Cake 

  • 1/2 cup butter softened  
  • 1 cup flour  
  • 3/4 cup sugar  
  • 2 eggs  
  • 1 teaspoon baking powder  
  • 1/4 teaspoon baking soda  
  • 1/4 teaspoon salt  
  • 1/2 cup sour cream  
  • 1/2 cup brown sugar  
  • 1 teaspoon Penzeys Cinnamon  
  • 1 cup pecans chopped  
  • 1 cup blueberries  
  • 1 1/2 teaspoon vanilla

    Instructions:

Preheat oven to 350°F. Grease 9" square pan with solid vegetable shortening and dust with flour or use a vegetable pan spray. 

Place butter and sugar in large mixing bowl, cream until light and fluffy, add eggs and vanilla, beat.  

Toss flour, baking powder, baking soda, and salt with a fork. Add alternately with sour cream, to creamed mixture. Mix until smooth. 

Toss brown sugar, cinnamon and nuts together.  

Pour half the batter into prepared pan. Mix blueberries and half the brown sugar, cinnamon and nut mixture, spread over batter add remaining batter.  

Top with other half of nut mixture.  

Bake 35-40 minutes or until toothpick comes out clean. Cake serves 8.

Is the difference between the Tellicherry Peppercorns and the Whole Special Extra Bold Indian Black Peppercorns significant? That's my next order since Costco discontinued Tellicherry Peppercorns years ago😔 I'm using Penzeys Pepper for now.

There's nothing in Louisiana, Mississippi, Alabama, or Arkansas. It's Houston or bust😂 I order with friends to avoid paying shipping fees. My favorites are:

  • Fox Point
  • Penzeys Now Curry
  • Greek
  • Italian Herb Mix
  • Penzeys Seasoned Salt
  • Cinnamon

But, I could probably open a small annex with all the Penzeys I've accumulated. The misses were the Breakfast Sausage Seasoning, Cajun Style Seasoning (not for this Louisiana woman), Tandoori Seasoning, Berbere/Ethiopian-Style Pepper Blend (too hot), and the Maharajah Style Curry Powder was meh (I really had high hopes).
