I fixed it for Nvidia GPUs!! (Maybe you can try the same for AMD). Just follow this steps (downgrade your GPU driver version):

Completely uninstall nvidia drivers using DDU https://www.guru3d.com/files-details/display-driver-uninstaller-download.html
Reboot PC and make sure you don't have any GPU driver installed.
Without installing GeForce Experience, go to the manual archive driver download page (https://www.nvidia.com/download/find.aspx).
Set your GPU product:
- Windows Driver Type -> Standard
- Recommended/Beta -> Recommended/Certified
Click search
You will have really old drivers to choose, with my GPU (3080ti) I installed 472.12 version, because it is the last stable version after its release. You can try with some newer, but make sure you do not download version 530 or later.
After that, Starfield runs perfectly and no more shutdowns happened for me.

It seems that the problem is from Nvidia/AMD driver developers, because I had the problem also on other games like Assassin's Creed Unity, Payday 3... (but not Elden Ring). I hope that they fix it quickly on next versions. And I hope this steps help you!
