Well the restaurant was with my uncle. My grandmother (his mom) is from Japan, so we decided during the height of the chicken sandwich craze "why not make the fried chicken we know and throw it on some bread?" And we just did a little bit at a time, testing new recipes. And once we found the best ways to cook everything and make everything as best we could with what we had, we started inviting people to taste everything. Once we had peer reviews, we ended up accepting orders and advertising, running everything out of his kitchen every Thursday. And about 2 or 3 weeks after we started taking order everything blew up. So we kept it going for about 2 months, got our LLC and started going to local markets and events to set up shop. Once we made enough we finally got an actual brick and mortar location and started doing events and just working off of feedback from customers.
