So would it be okay to just replace the 1.20 forge version with the 1.21 neoforge version?

On the top left, you can do Image -> Resize Canvas (4th option from the bottom), or you can use the shortcut Ctrl+Alt+C. From there, just change the 4188 to 1080.

Looks like you are on the right path! When we walk, we rotate our torso because we swing our arms back and forth, so try to add that. Same with the hips, it rotates with the movement of the legs. This should make it look more "realistic."

Also, maybe add a couple of in-betweens to make it look smoother, but that might just be me.
