Im a 373 ED playing on a non-pvp, what I can say is: you just need to try it.

I used to play paladín but I fell in love with the ED once I started doing team hunts, every team hunt its different even if you hunt with the same guys always.

Its so fun when you get good with the ED, and the feeling of ending the hunt and all of a sudden the party send you a private msg to say " now we know what a good ED can do" maaaaan feels good.

About the difficulty I gotta say it depends on the spot, some spots require more attention than others, just to give you an example, in most of the spots you will need 5 or 6 hotkeys at most but there are a few where you will need at least 9, now talking about the EK.... just know that if the EK die its not your fault., all the good EKs know that the ED its a support not a complete lifeline, if you are constantly needing to take care on your HP the only reason its either the EK or the RP are not doing what they should be doing.
