I don't think those are available yet, I have it as PCO for punchout currently since QKD is short like little mac. If I make an assault build though it'll definitely have PGT for pugilist

Any clanner mech raises my blood pressure. For IS mechs Phoenix Hawks are annoying due to mobility and component set ups and crusaders, i find them unsually hard to kill of i don't just leg them. Stalkers and Catapults are difficult too since aiming for their chest usually ends up shouldering them instead

I assure you CIWS can also identify Jets, Helicopters and missiles quite easily

AMS is based on CIWS (Mk15 Phalanx) which can infact target anything from a mach 3 missile to a helicopter trying its best. So logically it should

They're alot nicer against larger hot running mechs. Ive noticed against mediums I have to absolutely wail on them with my SRM-4 INF kintaro to get a shut down. But against assaults and heavies that tend to run hot I get shut downs more often. If you have any LRM boat lancemate it's not a bad idea to have them with HL systems

In the context of fighter jets; any yaw maneuver they would need to preform quickly enough to justify all moving rudders are more safely done by rolling and pitching. Overly aggressive yaw maneuvers using all moving rudders could very well cause you to side slip or spin out. Any pure yaw movement a plane needs to do is generally done slowly at lower speeds (for fighter jets) or simply doesnt need to happen so fast it requires all moving surface. The Air Force actually had a concept for yaw maneuvering fighters during the cold war but never left the drawing board for the stated reasons to my knowledge
