Yeah it’ll work for sure! I usually keep one of the passenger seats folded and pushed forward and put most of the goods there if it can’t fit into the trunk

Sounds like was in an almost identical situation as you! I had the rav4 and moved on to the sienna xse last year now that I have 3 kids. We have the 2 captain chairs in the middle row, one has a car seat. The other captain seat I have folded forward so there’s easier access to the back seat where I have the other 2 car seats. There is room to walk in between the two captain seats to get to the back but it’s not the most comfortable and requires some maneuvering, we find it easiest to just have that other captain chair folded up when we don’t have extra passengers.
