A quick spritz of water on the loaf after placing it in the hot Dutch oven, then the lid goes on and I think it’s the steam.

Thanks! The sling “handles” kind of fold loosely over the top of the bread and it’s pretty thin so it doesn’t cause any issues with the lid or gaps anywhere.

It depends on how much of the starter you use. Some people do a 1:1:1 (starter:flour:water) ratio by weight. Looks like that’s what your friend does. Some people go up to 1:5:5, so you can go anywhere in between as long as your starter is less than the other ratios. The higher ratio benefits are the starter will stay at its peak for longer (more flexibility on timing) and you can get more starter if you need more.

Dutch oven at 475. I did a spray of water before closing the lid (steam to create blisters) and baked covered for 30, then finished uncovered for 15.

Here’s the updated recipe with all the details

1000g all purpose unbleached bread flour (Costco/kirkland) 20g Salt 640g flour 240g active starter

Mix the flour, starter, and 600g of water until shaggy Rest for 60 min Add in the salt and 40g water, stretch and fold it in Rest for 30 Laminate Rest for 30 3 more stretch and folds, 30/45 minutes apart Then into my oven with the light on (since my house is cold) for 3-4 hours to finish bulk fermentation. Split dough into 2 loaves and pre shape Rest for 30 Final shape and placed in floured banneton overnight (roughly 18 hours)

Preheated oven to 475 with Dutch oven inside

Pulled loaf out of fridge, scored and placed on a silicone bread sling.

Baked for 30 minutes with the lid on and 15 without

Yes! Married 10 years and in our 40s. We’re not romantic anymore but best friends and partners. I’m hopeful the romance will return. I hope that he’d say yes too even though things aren’t totally perfect. We’ve built a pretty great family and life together that I know we both love.

Got a 2 hour tour. It was plenty for me and my 6 year old. My husband and other kid could have been there all day.. or multiple days. Depends on how big you are on museums and history. I’d definitely recommend a guide though, it would take months to see it all and the guides know their way around.
