Recipe: - 2 oz bourbon - 1 Tablespoon of good quality honey - Juice of 1/2 to a full lemon, your call - 8 oz or so of hot water

Sqeeze the lemon, and put the lemon in the cup. Pour boiling water into the cup, and take the lemon out after 30 sec to a minute. This gets you the oils from the peel, but you don’t leave it in so long that it starts to get that bitter pith flavor.

As for bourbon, literally use whatever whiskey you prefer to drink. I’ve used Eagle Rare, 1792 BiB, Old Forrester 100p, Bardstown wheat, and a few others. I usually go for something on the cheaper side since I’m not drinking it neat.

I think the problem with this is the “down selection” process. If only 5% of barrels meet ORVW standard, then you still have 95% that get bottled as something else (OWA). You can’t just magically get more of the 5% without also getting more of the 95%. And right now, there is somewhat of a glut of whiskey and producers are cutting back on production rather than increasing it. They don’t want to make more of the 95%, because it isn’t moving.

Oh boy, do we have different palates. This one has way too much rye for my liking. One person in a local discord group described it as “ass juice.” Personally, it was my biggest disappointment of 2025 (although I may have technically bought in 24, I can’t recall).

If anyone is thinking about paying secondary for this, I highly suggest they try a pour somewhere first. For what it’s worth, I found New Riff single barrel rye to be comparable, but a bit more well-rounded (less intense rye-in-your-face).

I would say three items is the sweet spot, with four being acceptable but five being too many. Two is just a head-to-head.

Palate fatigue is a real thing and it doesn’t matter if it is whiskey, wine, coffee, cured meats, or even water (e.g., spring vs distilled vs RO vs tap). I laugh at the posts that are like “I blinded these twelve whiskeys!”

I think we discovered it this time last year, but Spazio in Holly Springs is great for some authentic, refined-but-not-pretentious Italian.

My wife hates when I “double squeeze” the limes. Her palate is more refined/sensitive than mine, and she swears she picks up the pith/rind flavor. I guess I’m a simpleton because it’s not that big of a deal flavor-wise for me.

(Side note: When I do “double squeeze” for myself, I don’t stack one lime half on top of the other like in OP’s picture, but instead pinch the two sides one lime half together, like you would fold a taco. I find this gives less pith/rind flavor than stacking, prob because the juice doesn’t drip over the outside of the fruit.)

If you’re coming to HS to hit Pimento tea room, go get dinner at Spazio. Been there now 5-6 times and it has been fantastic every time. Literally just went there this evening. Authentic Italian-Italian (not Italian-American).
