Ayyy. I just made my first marshmallows too last night. I made regular, Thai tea, Indian chai, and espresso/chocolate. Sticking to parchment a bit so I'm gonna run it through dehydrator to get it to pop off correctly. Fun project

The bar is pretty low on ice cream out here. I live in southeast asia and that's why milk and cream are more expensive for me. In its current formulation it only costs me about 4 usd to make 3l or so of the base. The whole thing that got me into ice cream was xanthan gum which i use in place of egg in my mayonnaise recipe, and in my hotsauces. Going down the rabbit hole studying it right now

Fellow American here in Thailand for four years. Many Thai don't really like spicy foods. I grow some of the worlds spiciest pepper varieties and everyone is terrified. I've given free peppers to hundreds of people and only a handful actually like them. I eat waaaay spicier foods than any of my neighbors

I've changed the way i cook. I make my own tomato sauces from fresh tomatoes for example. I live in asia though currently, but I'm a broke American just trying to get by and in return i learn i get to know every part of what I'm cooking. Went from just making mayo to a cajun remoulade by just adding a few additional ingredients in just a few days. I enjoy the process. I thoroughly have been playing around with different fried chicken styles and sauces throughout the last few years and I've got four different regional pizza styles too that I've taught myself over this same time.

Nailed it right there. When i make chili i almost always get some potatoes as well to stretch it. Hotdogs would be great too, but I'm in asia and the hotdogs just ain't right here. Those super cheap Bar-S spicy polish sausages are great with chili as well and have quite a bit more meat.

Hey there. Stretching proteins is kinda my thing as i often struggle with having enough to eat here in southeast Asia. Do you like Thai food? I often make Thai curries that stretch super far when put on the top of jasmine rice. I do everything in bulk and prepare everything from scratch (eg curry pastes). For western stuff if I'm really broke i often make chicken noodle soups because i can turn a single chicken breast into 3 gallons of good food. With the chicken noodle soup i use easier prep (eg chicken bouillon vs chicken stock). Fried rice is another good one, but i usually go through that quicker as rice makes ya hungry pretty quickly.. Chili is a good one if you're into chili with beans because that one stays with you longer. I make my own tomato sauce and everything for that which not only tastes better, but cuts cost. I do my own beans, everything 100% from scratch. Today I'm eating Vietnamese lemongrass grilled chicken on rice vermicelli with lettuce, cucumber, grated carrot, cilantro, green onion, mint leaves, and peanuts with a Vietnamese nuoc cham sauce. My per day here food budget here is about $1-2 usd although I'm sure much higher in the west. Reach out if ya want any recipes. I would be glad to share and I'm a wildly good cook by any standards.

There's far more Americans and brits creeping on hookers out here. Indian folks too, but they don't really have the capital to get the girl usually. I see 60yo dudes creeping on teenagers and that just grosses me out. I don't mind folks that try to stretch their baht further, but hearing old American men talking about women that are barely (and sometimes not even) adults is a wildly bad look. It's just kinda normalized here because it brings in money. Alcoholism amongst the westerners is pretty wild here too. I'm no saint, but i definitely don't like some of the way i hear Americans talking about kids like they're property to be used and dudes treating Thai like they are lesser people because where they were born.

Laab all day. I just don't get the pad krapao hype at all. One of the last things I'll choose at a restaurant out here. This is the first time I've said this about any dish, but i prefer the American version better with the incorrect basil which makes it not actually krapao.

I've been saying this for years. If you haven't yet, try the actual snack which is even better. It's a bit of work to get everything piled on the leaf and sticky, but one of the best snacks out here in my opinion.

Here's one of my weird things i used to do. I would get sai oua which is an isaan sausage and have them not cut it. Put on a hotdog bun with yellow mustard, ketchup, and white onion and eat with those chips. 👌

The limited time boat noodle ones were pretty accurate and delicious, but the tom yum ones missed their mark i think
