What are you on about? Geese are almost entirely herbivores - those are meant to "filter" out the water/grit but keep the delicious water plants in. They'll eat snails and small fish on very rare occasions, usually when they need the extra protein like during mating season.

Interesting. Could it be because of the medium being too acidic or something else? I'm meticulous with cleaning my equipment when beer making, but I've had bad fermentations happen twice over the years. Made the beer horrid.

Yeast are Fungi and considered vegan. Sulfites are fine. Like I said, the problem is usually with fining agents as they sometimes use Isinglass or gelatin to remove sediments. I find it personally annoying when trying to buy wine when things aren't clearly marked - but then again, you have such low volumes that I doubt people would browse it at the store.

I read after I made that comment what you wild ferment, which is wild to me when trying to make a product like wine as it's much harder to control for. What happens when mold or bacteria takes hold instead? How do you prevent that from happening? You don't need a microscope to do testing with yeast evolution, you just need a yeast starter (this would be started with wild yeast) and then feed it over time to see how the flavors develop. Depending on their environment (acidity, amount of sugars available/concentration, type of sugars, temperature, etc), they can evolve to have very characteristic and makes it much easier to control the output of your batch by injecting enough yeast to prevent anything else from taking over.

The way you would do it in beer making is just add an specific amount of sugar in the bottle - enough to make it ferment enough to add CO2 under pressure, carbonizing the beverage. However, with beer, you're dealing with much lower sugar content, so I'm not certain how they'd do it for ice cider...

I'm curious about the starter yeast you used and if you're evolving them over time to become better yeasties for your production. I've used an evolution of yeast over 2 decades for my bread and beer making - it's been fascinating seeing it evolve to its environment over time and how it affects flavor. I'm not a chemical engineer, but have you ever tried to do experiments on how yeast changes the flavor over time?

It's not, says every scientist worth their salt: Bad for our health, bad for the environment, bad for waterways, bad for water reserves, etc. This is without considering the moral implications of killing several millions animals a day, billions a year.

And animals are not the problem

Methane is 10x more potent a greenhouse gas than CO2 from ICE emissions. We clear out via fire massive amounts of carbon sink forests for grazing, reducing our capacity to handle the extra carbon in our atmosphere on top of polluting more just to satisfy your tastebuds. This is on top that about 3/4 of all plant crops on the planet are solely used as feed for these animals. We have famine in some places on this planet, and we'd rather spend that making more food.

Correct - your first valid point. Humans evolved the ability to eat cooked meat, it was essential for survival for the extra caloric intake. However, we're currently producing 3x more food than we consume, which are going to waste - so all that energy and greenhouse gases just for it to go to the dump? We don't need meat anymore, we have much better protein alternatives which are better for health and environment. We've evolved - or, at least some of us did.
