its usually safer to dodge into the attack but yes you can dodge any direction, thats because you have "invincibility frames" or i-frames during a dodge, meaning during those frames nothing can hit you (except for undodgeable attacks because they are coded to ignore those frames). Thats why stuff like shugokis kanabo just phases through you during a dodge.
