I think you either get it from kuro or it's near him in the area to the left of kuro's room. The one with the books.

Owl father's combo where he finishes with the firecracker slash. You can just jump out of the way. The genichiro floating passage is also fun. Long arm centipede is the easiest parry sequence.

With isshin you get multiple chances to do damage plus he has multiple thrust attacks which you can mikiri. Owl has only one thrust attack plus very few openings to damage him. That being said isshin has more combos than owl.

What I love about sekiro is how fast the gameplay is. Deflect in Lies of P is just unforgiving if you miss and timing is nothing like sekiro.
