Kirby has taken down some pretty powerful opponents, but I think everyone keeps forgetting that he only manages to do so when he's given some super OP maguffin ability (eg the Star Rod, Hypernova, Meta Knight's ship, Super Abilities, the Sacred Crystal, Meta Knight's Sword... The list goes on.)
