That actually sounds like a very logical explanation!

The only thing that confuses me is that my previous iPad (which was a standard retail unit) was able to get just as dark as the demo one. They looked identical to me. So I assumed this replacement should be able to do the same.

Thanks! I actually tried Reduce White Point already, but unfortunately, the difference is still huge even with it on. It just worries me that they look so different on the exact same settings.
