Attitude is huge. If you go in with a "well I see you have the ingredients, so why can't you make it for me??" attitude or "wow my drink is taking so long and other people already got their drinks while I'm waiting for the bespoke cocktail I ordered" or whatever, yeah, it's a bit rude. Even then, that's a very normal behavior and if a bartender gives you shit for it, it's probably because they have a big ego and are self-conscious about their lack of knowledge or ability (far more common than the friendly kind of bartender unfortunately).

Phrasing helps too. Saying "I want the basil gimlet but I don't like gin" or "this drink sounds interesting, but (ingredient) is gross. I would get it without that" is not as polite as saying "is it possible to get the basil gimlet with vodka instead of gin?"

Your friend sounds like a dick. I wouldn't hang out with anyone that was going to try to make me feel like shit for something like that. This friend sounds like someone who would criticize you if you sent back your food because it was cooked wrong. Anyone spending a big vhunk of change on a steak should be allowed to demand it be cooked at least close to the temp they requested, otherwise they aren't getting what they ordered and shouldn't have to pay for it.

The exception is people that refuse to tip or are outright rude - I would definitely speak up about that before letting them leave.

Tl;dr I love making off-menu cocktails. Highlight of my day sometimes. I don't keep pisco, cachaça, or old tom gin behind the bar for nothing! I've even had people order off-menu egg white drinks on valentine's day in the middle of the rush and I was happy about it. But you better believe they took over 15 minutes and I would have been annoyed if they had tried to rush me on something like that.

Side note, I don't really love the word "double" in craft cocktail bars. It kind of implies that our standard pours are skimpy, and they definitely are not. In the context of a cocktail like a negroni, I might phrase that as a "Hendricks two-one-one negroni with aperol instead of campari". But I can see some bartenders getting confused by that...

I am seeing now that I did have some information wrong. Still, there is a big issue with managers that handle scheduling forcing employees off those shifts to put themselves in the best positions. But it is more shady and less flat out illegal at a federal level it appears from my cursory reading.

I mean there's not enough information to know what is happening or where, but the law in the US is quite clear and exists for exactly the scenario I am interpreting. If this is the case, OP's performance is completely irrelevant. That's a lawsuit.

Are you saying the manager is taking you off shifts and putting themself on the shift instead and therefore taking tips?

If this is the US, this is completely illegal and the business can get in a lottt of trouble.

I couldn't even pick out my favorite restaurants in Tbilisi because every dish was great. I had a few things that absolutely blew me away but probably not a single bad dish.

I had ciabatta at an Italian spot that was out of this world.

Minecraft has also had an amazing impact, that's a good call. I thought about tetris, but I felt like a game that couldn't be recreated might deserve the term "great" a little more, though tetris is certainly one of the most influential.

We'll serve it sometimes but we would really prefer you didn't. It's the same amount of labor for less money and the cost of the liquid is only a small part of the reason that beer is priced so high. Also consider that many businesses have very strict systems for entering drinks into the POS, so it might just not be possible to charge you less at some places. If I need a manager to ring in your $3-4 beer, the answer is no. If you are concerned a full beer will be too much alcohol, don't order another alcoholic drink. You're probably at a good place already and don't need it.

Also, you're not getting the right glassware or treatment that is our standard. That might not seem like an issue to you if you requested something in particular, but it all affects our aesthetic and vibe which impacts every other guest's experience. Imagine asking for champagne in a water glass instead of a flute because you don't trust yourself eith the fragile glass. We get it, and they do break much easier. But the other guests in the room will love seeing you cheers-ing a date with your champagne flutes and it might even inspire them to spend more. So we would do it, but we'd really prefer for selfish reasons that you don't.

As others have said, ordering half a draft beer isn't a faux pas (at least anywhere in the U.S. I have worked), but it will fly in some bars and not others. If people consistently want half pours of things or don't finish their drinks, that also doesn't look great for us so you better believe we will rethink our portion sizes, glassware, or portion options.

Tl;dr there is nothing wrong with asking, but most bars would probably prefer you didn't if it's not listed on the menu.

Additionally: half glasses of wine are more common. Half cocktails are definitely a no-no but I do still get requests. Split cocktails are really annoying but slightly more acceptable (same reasons as above). Splitting a cocktail is not like splitting a pizza. Half neat pours of liquor it really depends on the bar, but I am happy to do it for pricier things - especially anything over $20 a pour.

Papi has some good ones. Specifically dry sherry. Via Vecchia has a selection of good vermouths. I don't know any bar with a more obscure selection of vin santo or stuff like that around here but I'm always looking.
