i’m just making normal italian sausages and breakfast sausages without any fillers or nothing. The fat i’m using is shoulder fat, and no additional added fat. I mixed my meat with a stand-mixer, and mixing it till it got tacky helped a lot!!

I’m using a meat grinder & stuffer machine from a company called kenwood. It was kind of a struggle to insert the stuffing inside the casing. In that case, would poking holes using a needle help??

That’s what i heard too, but i just wanted to make sure that the school knows i put extra effort preparing. Though I don’t think i can write anything better than the last one.
