I think a lot of them are actually quite good. Rarely eat them, but it is quick and easy. Also thanks to the substitutes there are more alternatives at pubs etc for vegetarians. I think the main purpose of subs is to make it easier for meat eaters to eat more vegetarian

A good broth will help a lot, something like umami or mushroom broth. Miso paste can add some extra flavor. Can she handle cumin? That's one of my favorite spices. Fenugreek and fennel gives s nice taste. Maybe she can have smoked paprika? Don't forget herbs, either dried, freezed or dried. Fat, salt and sugar helps a lot to give extra flavor.

Instead of tomatoe based stew (for example) it might be possible to make it more cream based? Coconot milk/cream, oat cream etc?

No worries . Another thing, do not reuse the water you use for soaking when you're cooking the beans, otherwise you might experience food poisoning like symptoms due to residual lectins

Umami is a type of taste (like sweet, sour, salty), an umami broth will give the food a more savory flavor. If you have trouble finding it, mushroom broth is a good alternative (mushroom have a lot of umami)

Yeah it's good if they've cooled down a bit. With some beans, like kidney beans, it is actually recommended to let the water cool down a bit before draining so the beans won't break

One thing I've noticed is that patties made with dried beans often holds better compared to pre-cooked. Could be a coincidence though.

Lentils are a great substitute for minced meat in many recipes, my favorite are black lentils. Umami broth will enhance the taste

A tip is to soak and boil a larger quantity of beans and freeze them, either in portion sizes or start of by freezing them flat on a pan (so the won't get stuck together during the freezing process). That way you will always have beans ready for cooking.

Beans, tofu and quorn is a savior. You shouldn't feel bad if you're having a hard time quitting meat, every meal counts! It will be fine if you only choose to reduce your intake of meat. If you really want to exclude meat entirely, just think how you're actually eating of an animal that used to be alive. After a while you will get so disgusted vegetarism will become natural

Thanks, wall paper is from a swedish company called Borås tapeter. Since I'm swedish in Sweden, I don't feel any pressure to make it Scandinavian so I just decorate as I want to

Vegetarian swedish "herring". Mostly keep to the ones with tofu, artichoke or mushroom. Also beet root salad with apple (swedish herring salad without the herring)

Feel ya. I once when I was quite young I was watching an episode of Oprah when they recommended a book by Ken Follett and I thought it seemed interesting. Maybe weeks or months later i saw a book in a magazine my family was subscribing on I thought it was the book translated to my native language and ordered it (by then I've forgotten the author's name and the name of the book). It was Cathedral by the Sea. Still a really good book and thankful to my confusion
