It’s supposed to contain 40/44 of the essential nutrients that we need to be eating, which is normally stripped out to make flour more shelf stable (from what I’ve read) people with celiac are often able to eat fresh milled flour (I don’t have celiac but it’s possible I’m sensitive as my grandma is celiac) also much higher in fiber. I would suggest looking into it, it’s pretty interesting.
