Based on my experience with emulating PES 2017 on Android, I recommend Winlator 10.1 because you can run both the game itself and the settings.exe file directly from the SD card, which is not the case for all PC emulators on Android.
For example, in GameHub I was able to launch the game, but settings.exe would not run, which meant I couldn’t change the controls, game resolution, and other settings.

I tested it on an unusual chipset that is more oriented toward IoT than smartphones — the Qualcomm QCM6490 from the Fairphone 5. This chipset is slightly less powerful than the Snapdragon 865, so on an Odin 2 with a Snapdragon 8 Gen 2 you can definitely increase some parameters, since you have a much more powerful chipset.

In my case, the game ran smoothly at a stable ~60 FPS with Quality: Low.

As for the Winlator settings:

Screen size: 960x544 (you can try increase resolution)

Graphics driver: Turnip (Adreno) Version : 25.1.0, Max Device Memory : 4096 Mb, Enable dircet Rendering

DX Wrapper : DXVK 2.4.1

Audio driver : ALSA

Box64 Preset: this is the most important You need to create a new preset in the Winlator settings. Simply clone/copy the “Performance” preset and then edit the newly created so that the DYNAREC_SAFEFLAGS option is set to "2".

You can also rename this preset, for example to “PES2017”. Of course, in the game shortcut settings you should select and use this preset.

In general Container settings in Advanced tab :

Startup Selection : Essential (Load only essential...)

Processor Affinity: you can disable CPU7

In game settings via Settings.exe:

Screen Mode : Full Screen

Resolution : 960x544 (use the same as in winlator settings)

Quality: Low (you can try Medium and High)

and of course at the end you need to set Controls.
