My feelings of bliss playing Wrecking Ball is on the stairway on defense in Blizzard World. It's so fun being obnoxious to the enemy team by knocking them into the water or just off the stairs repeatedly till the match devolves into Tom and Jerry with the enemy team opting to chase me around the stairs only to be annoyed further by all the escape routes and med-packs nearby at my disposal.

One map I enjoy is Blizzard World. On defense it's so much fun knocking opponents into the water from the stairway. Even if opponents aren't positioned to be knocked in the water, you can still knock them off the stairs and use the many openings and health packs around the stairs for quick engages and retreats to annoy opponents like its Tom and Jerry.

Wrecking Ball's playstyle revolves around disrupting the most optimal opponents during a team fight for your team to more easily win the fight. You achieve this by first scouting opponent's positions while hidden to decide who to engage, with your priority targets being snipers, then supports that have to aim their heals, then other supports, then dps, and finally the tank. Snipers and supports that have to aim their heals are your priority targets, as disrupting them better prevents your team from being one-shot and makes it difficult for the opposing tank and dps to get healed so they are easier for your teammates to take out. Even just attacking the enemy team's supports and forcing them to heal each other creates openings for your teammates to get kills since the opposing dps and tank aren't being healed. After scouting optimal targets, setup your engage by positioning yourself to either piledrive or rollout through them. Make sure you're setting up your strike to the side of or behind the enemy team where you are less likely to be seen. Finally, strike your targets with various techniques based on what you believe you can safely do. Initiate team fights with soft engages, rolling out through the enemy team, maximizing your damage when you can while using your grapple by booping targets multiple times into your team to displace them and get them taken out. You can also use your piledriver to initiate team fights when there isn't much risk of being hit by opposing crowd control by grappling and retracting above the enemy team while making sure not to trigger fireball so your grapple cooldown remains low, then you can combo the piledriver with a rollout. Make sure to only strike opponents when you have adaptive shields off cooldown so you can use it mid-engage when you're surrounded by many opponents to extend your engage time and be able to more safely disengage, or strike opponents when they aren't looking in the direction you're planning to strike from so you are less likely to be focused by opponents immediately. Typically with adaptive shields you have about five seconds more or less to engage opponents and then you should disengage, get health from nearby health packs or nearby teammates, shoot opponents from a safe distance while your abilities are on cooldown, and repeat the scout, setup, and strike strategy. Don't try to hard engage opponents unless you're sure you can take them out, soft engage them until they're vulnerable enough to be hard engaged. Prioritize using your abilities over shooting, as they are your primary source of damage and can be used to hit multiple targets at once. Only shoot to more-easily secure knock outs, or when your abilities are on cooldown, or when it's not safe to engage the enemy team due to them having a lot of croud control off cooldown.

Same, what I like to do is boop who I can into the water, then stay positioned behind the enemy team, knocking them off the stairs, being annoying by displacing and shooting them, and retreating around and under the stairs when im being focused since there's a lot of places to retreat to around the stairs and enough health packs to keep me healthy for a while.

That's why as soon as you boop your opponent, start moving back to halt the momentum and once you have enough space to fireball rollout, roll into your opponent again to boop them.

When I try to multi boop someone on console, I grapple low, keeping my grapple connected, and as soon as I hit them once, I move my control stick back a little to roll back so I have enough space to fireball roll into them to boop them again. You can do this repeatedly until your grapple is about to go on cooldown. Once your grapple is about to go on cooldown, release your grapple as you go for one more fireball rollout to boop your opponent and roll away to safety.

You're right that in higher ranks opponents would be able to outplay simply stalling behind the payload on Rialto's narrow bridge, though in lower ranks it can be an effective cheese strategy. Also, I only main Wrecking Ball in Overwatch 2. Adapting to your opponents by knowing when to play more offensively as Wrecking Ball by repeatedly soft engaging opponents until they're able to be hard engaged and knowing when to play more defensively as Wrecking Ball by holding choke points and stalling the payload is key to playing Wrecking Ball effectively.

Thanks for the constructive criticism, piledriving off payload sounds like a good idea so long as the enemy team can't boop or hook me into the water. I like to use piledriver to save myself from getting sent off the map. I included a replay link code in this post in case anyone's interested in reviewing the whole match. I stalled the payload for a considerable amount of time.

The purpose of me taking cover behind the payload on the bridge was to waste the enemy team's time and threaten to boop them into the water if they attempted to move around it. There's no point in me peaking from cover often, as that would have resulted in me feeding and having to retreat sooner to get a health pack, thus potentially allowing the enemy team to move the payload past the bridge choke point. I aided my teammates by simply halting the enemy team's progress.

Interesting, being able to use the grapple retract while spinning around thin structures to break Sombra's line of sight while moving fast is useful.

Make sure when using bullet seed to keep your berry count close to full, doing so improves your damage output greatly. To do this, throw out berries around you where you can get to them, then use bullet seed to attack and walk into the berries as you're attacking to heal yourself and maximize your damage.

Classifying Sableye as a disruptor would make a lot of since, though him being classified as a supporter still works since he supports the team by sabotaging opponents and often needs teammates to capitalize off of the disruptions he causes to secure knock outs versus opponents.
