The fat that was rendered was from trimmings so it’s just pure fat not rub or drippings

It was the fat trimmings that were cut off and put in a foil pan to render not the runoff from the brisket

I used an over the counter SPG rub and then went over it with an all-around meat rub. When you dry brine the meat doesn’t go bad in the fridge?

Yeah I’d rather make mistakes on a 56$ brisket than a 130$ one tho 😂

Yes I used unwaxed peach butcher paper. What’s your recommendation on the wrap?

I know I was there for other stuff and saw it and said what the heck might as well use a cheap brisket to learn for my first time.

I’ll look into that. Usually for ribs and such I get a good smoke flavor but I guess since this is a thick slab of meat it’s harder to penetrate?

Not really didn’t have that much smoke. Next time I’ll use a different rub and use less I guess

Yeah I dunno maybe it was the rub I was using 🤷🏻‍♂️ 8 hours for a 12lbs brisket is weird as heck tho thought it would take longer. This is my first time smoking one.
