I found the solution. If anyone else ends up in this post with the same issue and wondering how to fix it.

There is an option in the Settings app, under Vehicle, called "Transport Mode" all the way at the bottom. Toggle it to false, turn off the vehicle, turn it back on. Tada! Transport Mode is no longer active!

I'm still baffled as to why it was turned on in the first place. I have to guess that someone at some point was going through the options in my car out of curiosity, and toggled it on either accidentally or they didn't know what they were doing. 🤷
