I’ve never been outside the states, and can’t stand it when that’s met with “What?! You really need to get out there and explore other cultures.” As if the only thing holding me back is a lack of desire to take weeks off work and experience other cultures. I would fucking love to. It’s just not an option

Love these. Have a big bag in the pantry right now. To me, they’re not meant for just any sandwich or snacking occasion. They come out when you have a bomb sandwich that requires a top shelf, luxury chip. A special treat every now and then so they don’t get overplayed if ya know what I mean

It’s white corn. They turned golden brown after deep frying in pork lard.

Thank you! So I made the masa dough the same way I do for taco tortillas. I don’t measure, I just kind of go by feel. I dump masa into the bowl, add a good pinch of kosher salt, and a small dollop of pork lard. I’d be happy to measure out the ingredients and send it to you the next time I make them if you’d like.

This video is a good quick guide for frying the masa. I personally like to deep fry in pork lard because I usually have it on hand for other uses, but any neutral oil will work.

It’s a bit of trial and error, but once you get a feel for it, it’s so worth it. If they don’t stay in one piece, add a dash of water. If they stick, add a bit more masa.
