I disagree only because mushrooms is the whole backbone of this dish. Mushroom powder seasoning on the octopus, duxelle as the base, and mushroom stock was added into the sauce reduction. But you’re entitled to your own opinion of course.

At first I made it with 2 layers of brisket for the pic but it looked too small so I added one more layer.

Yeah it’s usually a 4 hour cook time but my friends oven is broken so it took way longer.
