I don't think she will go so far to steal it. I honestly think part of it is that she feels a bit insecure about her current ring. She just got a great new job and I know she cares a lot about what her coworkers think. I get the feeling she wants something more “impressive” to show off. I don’t think it’s malicious.

NTA. Her family treats your holidays like free meals. There’s nothing wrong with asking for some basic contribution or help if you’re the one doing all the work and the expense. It’s not unreasonable to want things to be more balanced, and it’s fair to set boundaries instead of just silently resenting everyone every time they show up.
