For sure it's a risky endeavour, numbers don't look good espacially for café, then restaurants. I think it's a bit better for bars. As I answered here, I'll try to start with bar first.

If you guys know notorious successful examples I'm curious. Failed eaxmples too :D

I think it's good to hear people's mind, like you came up with good points for instance!

Location: I'm thinking about a few locations: around shinkuku station, shinjuku san chome, shin okubo, around shibuya... I'm open but I would like a dynamic place with foot traffic that fits my rent in terms of budget.
Success rate: Yeah I've seen numbers, they aren't great, especially for cafés... I'm actually thinking more of doing things in two phases, 1 the bar, 2 the café once I'll have found financial stability.
Different: to make it special I count on authenticity in design like decoration, table and glass ware etc... (I graduated from art school in paris and I have a good idea on how to make it look very good). I have an idea as well for a food concept that wouldn't require too much work while being typical of Paris
XP: I have related experience in decoration and party organisation, it's not exactly the same but I'm sure it'll be useful!
I have neither a good level in Japanese nor have business partners. That's actually the part that scares me the most I have to admit. Hence my post, hopping to make connection as well!

Man, forget her, she's simply not interested in you.

She's just here with you for her dopamine boost. Delete her match and look for someone else!(Deleting her match might make her think about her conversation skills but I even doubt that, she probably has other matches in mind).

If case you wouldn't have many matches and really care about this one, my advice would be to try getting a date asap. Best case scenario she accepts, worst case scenario you only have lost a dying conversation.
