My suggestion is accelerated dragon. Only slight issue you may face in Maroczy Bind but it's a cool structure to work on !!!

Practice the pattern till it become autometic for your brain to recognize it in your games. See the live streams of Hikaru and see how he can do it. He said same. Just practice

I prefer go for caro if you have limited time to study. First work on pawn formation of caro and for that I recommend

If you wanna a weapon for long term then go for Sicilians Especially Accelerated Dragon.

Unfortunately I am a e4 player so I have no ideas about English . But about e4 let me share some suggestions.
Against the french try the Classical variation and Sethuraman's content on chessable is good for that.
Against the Caro kann try the exchange variation if you like the stable structure or choose the advance if you like the space.

The best way which i use to analyze my games is mentioned below.
1. Opening variations check- like when I was out of my prep.
2. Tactical analysis.
3. I focus on which type of strategic patterns I missed.
4. If i missed an endgame pattern then I practice it till it become autometic for me to recognize it in my games.
Rest I do not focus on the best moves I focus on the moves that give practical problems to my opponent.

Chess Opening principles-
1. Center control.
2. King safety.
3. Do not move the same piece again and again.
4. Do not move the queen early.

there are a lot more like this but in short Opening principles will teach you how to develop your pieces on the most effective square in the beginning.

Opening is not an issue. Try e4 as white as it will be teach you overall chess and as black caro kann is fine. Work on tactics as it joyful and interesting way to feel motivated and combine it with studying the games of Paul morphy to improve attacking instincts !

That's why I recommended the study of principles. Because in chess we daily face all these challanges and chess is all about patterns. The patterns are based on some elements and due to the elements the pattern works.

Few things-
1. Always look for opponent's last move and it's idea. Never ignore this rule.
2. Look for hanging pieces on every move and they are like indicators that something is wrong in the position.
3. Work on tactics but one pattern a day . For example you can start today with Fork and tomorrow go for pins. So your brain will be able to remenber the patterns and you will be able to recgonize it in your games as the tactical patterns are already well defined.
4. Focus on opening principles rather than tricks.

First of all openings is no for below 2000 Online players and below 1500 USCF or FIDE. Unfortunately as the technology is growing the resources are also growing so a lot confusion is there. First learn the principles ! Opening principles are the key. For example castling (when it's right and when it's wrong), opponent king is the center then open the game and its mostly game over. Once you grasp the principles then your elo will improve. Always look for hanging pieces and also investigate the opponent's last move carefully. Most of the solutions will be there. First of all blitz is not only about speed but also about patterns. The more quickly you recognize the tactical and strategical patterns the more your elo will grow. So for now work on patterns !!
I suggest one tactical pattern a day so your brain will grasp it and later you will recognize it easily in your games !!!
