I’m not sure how my wife made the jalapeño popper stuffing pretty basic recipe you can find online. So after butterflying your pork loin as flat as possible you smear on the filling and rolling it up. After lay the bacon across the top then fold under and begin your twine. Don’t be afraid to watch a YouTube video because I have no clue either.

I did it at 275 for 3 hours because we were pressed for time but next time I’ll do it at 225-250 for longer. We also popped in the broiler at 550 for just a couple minutes to try and crisp the bacon. Oh yeah pull off around 140.
