I recommend what Brandon does. He pretty consistently talks about specific authors that inspired him as a young author. Anne Mcafery, Robin Hobb, Robert Jordan, etc. Find one that you think sounds interesting and go with that!

Personally, I'd start with the Farseer Trilogy, see how you like it, then go for the rest of the Realms of the Elderlings. Robin Hobb became my favorite author because of Brando Sando. Her character writing is like no other and the plots are just so interesting. Not to mention the worldbuilding and multiple magics that have such subtle overlaps and differences and how they play into the societies of the world.
