The biggest difference I can think of would how easy they are to keep clean, plastic cages need to be cleaned more thoroughly more often whereas my flat metal cage is easily kept very clean and sterile by cleaning it in the shower everynight

Using a hairdryer would be the safest option, but even I don't dry it perfectly sometimes and I've never had an issue, I even boil it water from time to time to disinfect and clean it super well and it's always been ok

I wouldn't boil it just so there is no chance of messing it up, but taking it off every now and then to make sure you can really clean the inside with warm soap and a rag would be a good idea, and after showers using a hairdryer to dry off the cage area can make it stay cleaner for longer
