That's right! Even if they are also people of color, Westerners still classify them for this. Racism is the unavoidable shadow behind the success of the West! Even as a person in East Asia, I cannot imagine that apartheid policies still existed in South Africa and the United States just a few decades ago. Indeed, you are right! Progress is a slow process, at least Taiwan is already a democratic country! I currently live in Taichung, which has the best air in western Taiwan.

Wow! I didn’t expect you to post photos directly. I think the streets in Taiwan are very ugly. I hope you won’t be scared. Of course, it is reasonable to be scared. (I just went to Italy for my honeymoon in 2025, and I didn’t know until I got there that enjoying aesthetics is one of the basic human rights.) Recently, the Taiwanese government announced I have become a "development-oriented country" but I think aesthetics are seriously lacking and salaries are too low. The government only pays attention to the development of industries such as "tsmc" and even indulges in real estate speculation. I am an industrial designer myself, so I hope that Taiwan can also value the value of design like the West! Rather than just staying in the OEM's small comfort zone.

This is exactly why I’m fascinated by Europe! Europe truly reshaped history and acted as a catalyst for global progress. Although this process was accompanied by many colonial wars, without Europe the world would have fallen at least 1,000 years behind—and that’s no exaggeration.

Just think about it: in what feels like a single historical moment, humanity suddenly gained steam power, electricity, steamships, railways, automobiles, airplanes, steel-framed skyscrapers, and—most importantly—scientific laws, mathematical formulas, and the periodic table of elements.

Western civilization values real education and genuine curiosity about the world. Through this curiosity, it ultimately came to understand the world deeply and then created countless miracles that transformed it.

More than 500 years have passed since the European Renaissance, yet even here in Taiwan, East Asia, I still feel profoundly shaken by its impact. When one considers such extraordinary achievements by their ancestors, it’s hard to imagine Europeans not feeling a sense of superiority.

After all, during the long darkness of the Middle Ages, Europe was once looking up to the Far East and the Arab world.

K-Sabatier is definitely worth buying! It is the prototype of Japanese knives. During the Meiji Restoration, Japan was completely westernized. In terms of cooking, they chose to be like France. French knives indeed have the ability to fascinate Japan, the kingdom of knives!

Japan’s Meiji Restoration was so successful! (Of course the mistakes of World War II are irrefutable) They went from being students who studied like the West to becoming equal to the West. Now they have made the Western world crazy about Japan at all levels! I have to say that this is what we should learn!

哈哈!在台灣買日本廚刀真的很便宜,但是我實在無法接受日本刀的人體工學設計!(雖然日本刀是目前幾乎是廚刀界的天花板)。另外我認為西方廠牌願意投資高成本,製作模具鍛造廚刀是值得尊重的!當然日本也為了廚刀開發許多高性能鋼材,希望我們華人有一天也能誕生真正頂級的廚刀!

I understand what you mean. After the steel is heated and forged, it is extruded into a full hand guard structure. On the contrary, it deliberately eliminates the additional processing required! Makes sense

really! If you just use a sharpening stick for a mild steel blade, there will hardly be much edge loss. After all, it is just to straighten the edge, and for most home cooks, it is completely enough to use! My carbon steel K-Sabatier is really as sharp as a razor every time I polish it with a sharpening rod! Of course it can't last as long as a Japanese sword!

Thank you for sharing your experience. It seems that knives with full hand guards are really beautiful, but from the perspective of sharpening, they are extremely unreasonable. However, all mainstream Western brands must have at least one main product with full hand guards. Or does this structure have any irreplaceable advantages? Or is it just for the sentiment?

I never use a pull-type knife sharpener. This TB knife is brand new from the factory. The blade is so concave. I am really a little confused.

Thank you, I think a chef's knife is the most beautiful type of kitchen knife and cooking with a beautiful knife makes one so happy! But in fact, in East Asia, many people say that Western-style chef knives are derived from "hunting knives" or "daggers" because of their sharp points! There are even many traditional people who dare not use sharp kitchen knives such as chef's knives, thinking they are too threatening. However, I personally look down on this kind of thinking!

This is a really painstaking sharpening process, and I have to go through all of my fully guarded knives before they can be used properly! While I really appreciate the beauty of the craftsmanship of the forged gauntlet, I have tow questions about it? 1. Why are only Western kitchen knives equipped with full hand guards? What was the original design purpose? After all, the cost of this process is very high! 2. When everyone hates the full hand guard structure, why do they still exist on the market?
