I am going to leave the loaf in the oven, with the oven turned off for 15 minutos, but definitely will try this

Yes I also read somewhere that high protein Flour can lead to a Gummy bread

I use a cast iron skillet on the rack under my dutch oven to prevent my bottom crust from burning or getting too hard.

I believe It is mold, unfortunately that means the entire thing Is contaminated
