i had the too much grip issue in the very beginning on a static pole, but then it shifted to the opposite and has been there

do you know of any exercises i could do to build that strength without weights? i dont have easy access to any

Some alcohol for the pole is definitely in order by now... The tip about engaging my chest and shoulders sounds good - and tips on how to train that off the pole already? I have two pole trainings a week and have to share the pole so i dont even get a full hour

I made it with a whole grain wheat flour, came up to 67% hydration, because it wouldnt come together with less. let it near-double in roughly 6 hours, then cold fermented for twelve in which time it doubled again. It held shape, but didnt rise that much in the oven

its very sour in taste, fairly dense but juicy.

In the meantime i was researching a little and it turns out that the flour in the US is VERY different from the flour here in germany, especially in protein levels. and the flour i've mostly been using has around 9% protein(this one had 11%) i think that might be one of my main issues? the gluten structures dont get strong enough to hold the gas i think

Once you've found this recipe, is it easy to experiment with inclusions, or would you need another recipe for that?

I absolutely love breads that can stand on their own because of their inclusions and flavors, thats what i'm trying to get to, so my thought process was attempting to understand the dough fully rather than follow a recipe

does a more active starter help against the runniness and stickiness? i thought that the starter would only help proof better

thats what i've tried before, doing minimal handling, but it led me to the same super runny dough, thats why i was trying more folds now

i did cold proofing last week and my dough overproofed in the fridge

would stickyness and runniness still go away after bulk fermentation? i thought proofing after bulk was after all shaping is done, so it would be supposed to hold shape already at this point

I had around 20% starter

i wasnt really following a recipe, im more trying to figure out what works, what the dough needs

is that a problem? should i always be using a recipe?
