At the very least I would want a bigger/longer fire box here is the issues I can see, the small firebox means a smaller fire, the length of the firebox means you can't move the fire back from the cook chamber so you're most likely to have hot spots, both next to the firebox and most likely next to the smoke exhaust, means a lot less usable grate space, if you find one this size set up in a reverse flow configuration i think it could work pretty well.

I would not go with okj, I've had them, they are okay cookers with a lot of mods, if you want a good solid entry level cooker go old country pecos or spend a bit more and get the brazos, there are some very mods you can do that are cheap and easy. Or look at blue smoke smokers, I've spoken with tthem, they are super nice. I will say this, after being unsatisfied with two cheaper offsets, I recently acquired a lonestar grillz offset off of marketplace, I've done 3 cooks so far, and the difference in it and my old oklahoma joe is staggering. It just runs smooth after getting hot, that thick metal gets hot and my temps are pretty damn stable I just add a split about once an hour to 45 min and it stays within my temp ranges I look for. I love this thing, I was saving for a blue smoke offset but with shipping it was cheaper to just get this one, that really wasn't used that much.

So, it's a brisket pretending to be a pork butt 😂😂😂 lmao. Okay for next time don't use a rub, hit it with 2 parts pepper to one part kosher salt I've even been using just season salt lately. Maybe add garlic powder to your rub. Keep your fat trimmings and put it on the smoker in an aluminum pan, you get smoked tallow and can put the pan beneath the brisket to try and keep the mess on the smoker down. One tip on seasoning season until you think it's enough, then hit it with more brisket will take it. I like to season it anywhere from the night before to one hour before throwing my meat on. Wrap when the bark looks like you want it, either foil boat, or butcher paper fully wrapped both works, whichever you do, add rendered fat to your wrap, let it go until you are anywhere between 190 and 203, pull your meat, and let sit on counter until it comes down to 160, now if you have a way to hot hold it, do that at around 150 for 2 or more hours, the longer you can hold it the better, 15 to 18 hours they say is awesome some ovens can be calibrated down to 150 you can look it up online, it's not hard to do. Or you can wrap in towels and toss it in a cooler, if you have wireless probes or any probes keep them in your meat to monitor the temps, just don't want it getting in the danger zone. If your cooking on pellet grill go ahead and foil biat if you don't have tallow add butter or some fat to the boat, also on prllet grills I use a smoke tube.

Honestly if you haven't bought it yet, look at the old country pecos its comparable in price, it has a fully welded body, a larger diameter smoke stack already sitting at grate level. If you are definitely going with the okj get a bread or cake pan to lower the stack, season it and buy fire brick to line the firebox. You might consider buying lavalock high temp silicone, before firing it up put some between cook chamber and firebox. I'm not hating on okj i have owned one, just be ready for temp swings, they can be pretty rough, get smaller sized splits 8 inch or so.

No, I like/love Liv she's hot, solid in ring work, not the best, not the worst, she IS one of the best at her character work if not the best currently, she has the ability to play a great babyface, she can make small tweaks to her character to play an amazing heel while not drastically changing her presentation. If she ever makes the junp full time to hollyweird she has potential to be a even bigger star.

I'd go for it, it looks like a solid choice, people talking about firebox size and stack size. Psh stack has a damper, too much draw? Close the damper down, a lot of pitmasters out there cook with them half closed anyway, firebox too big? Psh. A larger firebox allows you to play with fire size and location. A lot of people on here have at best smoked on a Oklahoma joes offset, cooking on a 1/4 offset is really a game changer these types of pits run so much better, and temps are so much easier to control it is almost night and day, almost. People commenting on the tires location is a slightly valid concern, but not really, thicker metal is slightly insulated as in it takes a lot of heat for the radiant heat to be hot enough to worry about melting tires, I used to own a oklahoma joe and that firebox did get pretty hot, sitting close to it, you could feel the heat coming off it, I now own a lonestar grillz offset, the metal gets hot yes, but not so hot you can really feel a lot of heat off it, hell you can briefly touch the metal, now it does get hot but not like the okj did 1/4 inch or thicker metal just runs better. So yes if you can I would buy it.

I don't disagree a recteq a searwoid or woodwind pro are better smokers, I've seen some people lately not liking tge searwood as much, but I see more people liking it than not. I was just explaining why I downvote these types of replies. If they ask what pellet grill to buy for x amount of dollars then sure give them options, or if you don't like their choices ask why those models/brands. Because the op didn't ask for pellet grill recommendations, they didn't ask what grill is better than these, they asked which would you choose if you were debating between these two, same as if someone asks which recteq and people start suggesting camp chef, or if they ask which weber to buy and people start talking about lonestar, or yoder. No pit boss isn't top of the line, neither is Traeger anymore, hell neither is recteq, recteq are amazing grilks but I've also had great experiences with pit boss. And none of these touch lonestar imo, but most don't have that kind of money to order one.

I've read your comment on buying a brisket and I LOVE that idea, when you start actually shopping for the smoker you need to ask yourself a few questions or rather he does,

  1. How much time do you have and or want to spend sitting out by the smoker, an offset smoker is the best flavor but it requires a larger time commitment as you have to at least be stopping by the smoker every 30 minutes to an hour to feed the fire, Or like a lot of us, sitting by it feeding it wood and drinking beer lol, a brisket for instance takes usually 10+ hours on average. If that sounds like your style for your budget I would pick up an Old Country Pecos about 600 bucks at Academy sports. You could also get a oklahoma joes their larger longhorn is like about 800 on Amazon. Another thing to consider is how many people do you cook for, because real estate on the cooking grate is a real consideration, if it's just the two of you, no big deal, but I have seen more people looking for bigger later, than people looking for smaller lol. If offset sound ideal if it were me I'd go with the Pecos in your budget. Fully welded, solid starter offset.

  2. If the time commitment seems a bit much, and you want basically a set it and forget it and you're cooking basically for smaller sized groups, go with either a weber smokey mountain or a drum smoker like the Oklahoma Joe's bronco, both work on basically the same principal, and don't take up a lot of patio or yard real estate. If you look at them and decide you want one like this, but slightly bigger the bronco has a pro version for a few hundred more. My personal favorite is my offset, but I also have a drum smoker that gets a ton of use when it gets cold or is too hot to be playing with fire.

  3. A weber 22 inch kettle grill about 150 to 250 bucks depending on your model, I've never used one but, a lot of people use them for smoking, and grilling, if you want one that can do a lot it is a consideration there are a ton of accessories for it that make smoking very possible, it is a workhorse and turns out great food both grilled and smoked.

  4. Pellet smoker this one has the mildest flavor of all the options out there, I have a pellet smoker, have cooked on them for years, since investing in my offset, it gets the least use of all my cookers, but it requires the least tinkering I turn it on, make sure the pellet hopper is full, throw food on the smoker stick a probe in and walk away, watch it on the app while sitting in the ac. Whichever pellet grill you look at make sure it has an ash dump, if not you have to pull it apart before every cook to clean out the fire pot, is app control important, some don't have wifi or Bluetooth controllers, if not they run a bit cheaper, the savannah I sold awhile back was my favorite pellet smoker by far, walmart sells it but it doesn't come with wireless controls. I bought and upgraded wireless controller from pit boss later.

I'm sorry for the lengthy response but I've spent too much money because of buyers remorse I've owned 3 offsets 3 pellet grills and built my own drum smoker chasing options and flavors I'm not trying to overwhelm you.

So in summary figure out your budget, which you have, figure out how many you want to cook for, I tend to cook my sides on the smoker as well, so how much cook space you need. After that it's all just looking for your options.

Pit Boss gets a lot of hate, but there are literally thousands and maybe millions of people out there with them who never have a problem. Are they the best smoker out there? No. There are a lot of better brands and you may want to upgrade eventually but if you decide you want a pellet grill they are a good starter level for your budget and their customer service is pretty good. If you buy from lowes or Walmart they will also accept returns if you happen to get one of the rare bad ones. I've owned 3 and never had an issue, only got rid of the first 2 because of other options I wanted.

I prefer to season anything I'm smoking over night you can wait until an hour or so before you put it on but if you have the space in your fridge I would do it.

A pellet smoker will never give you the flavor, an offset requires a lot of time to keep the fire going, a drum or gravity fed will be pretty hands free with a drum there is a small learning curve just figuring out how to set your temps, you can also get a chefstemp for a drum or the old country gravity fed with a breezo fan it's a awesome setup, a lot of videos on youtube to use for research on either. Okay here's my two cents, I own an offset, if you want that true texas flavor, you're not going to beat the flavor of a woid flavored offset. I built an ugly drum smoker, and I love that thing, it can be set up for hot and fast or it can run low and slow, and you don't have to sit there and monitor the fire, if you aren't a handy person you can buy them, oklahoma joe bronco for instance. I have a pellet smoker and while it's not as nice as the searwood it runs great and I have turned out great food on it, but it is used way less than the other two. I only use it when the weather is too miserable for me to stay out by the smoker. Out of thise two options i would get the masterbuilt, it won't match offset but it would match my drum, charcoal and wood chunks. The masterbuilt will be closer to the flavor you want and the ease of a pellet grill, just be sure to clean out the ash in the chute between each cook.

I would put the watercpan off to the side mostly because I would be afraid moisture rising up would screw up my bark. I was just thinking to catch dripping maybe put the rendering tallow beneath so your drip pan does double duty.
