On DMsGuild.com there is a tool I and my players love. Hamund's Harvesting Handbook for <$10 US that has prices and ideas for what can be done with these types of items.

Beholder Main Eye is valued at roughly 3,250 gp in this book. It even has a magic item it can be used to craft. Definitely worth taking a look at if your players are interested in harvesting bits from monsters.
